Upside Down Pizza

This is a dish that I picked up from my BFF! :) We had this at her house and I immediately made her send me the recipe. Quick and easy to make up, it is also the perfect dish to bring to someone's house for an easy supper - especially when they are just getting home with these cuties...

Upside Down Pizza

2 pounds hamburger
1 (16 oz) jar spaghetti sauce
1 1/2-2 cups grated mozzarella cheese
1 (8oz) can crescent rolls
1/2 cups sour cream (she says this is optional, but not for my family! it's a must!)
1 tablespoon butter, melted
1/3 cup parmesan cheese
1/4 cup chopped onion (also optional, again not for may family! :)

Brown beef and onion, drain. Add spaghetti sauce. Simmer gently to let flavors combine. Spread meat mixture into a 9x13 pan. Layer on cheese and sour cream. TOp with crescent rolls (spread out). Brush with butter and sprinkle with parmesan cheese. Bake at 375 for 20-30 minutes or until crust is browned.

Sorry - no finished picture this time... I already told you - this was a make and take one. I let them cook it up on their own!

To Die For Blueberry Muffins


I knew that my very first post had to be for these muffins. They are mouthwatering, melt in your mouth delicious! So full of blueberries and the best topping EVER!! I mean, just look at how big the tops are... Can you beat that??


To Die For Blueberry Muffins

Makes: 8 servings

1 1/2 cups all purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries (I use frozen)
1/2 cup white sugar
1/3 cup all purpose flour
1/4 cup butter, cubed
1 1/2 teaspoons ground cinnamon

Preheat oven to 400 degrees. Grease muffin cups or line with muffin liners. Combine 1 1/2 cups flour, 3/4 cups sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top and sprinkle with crumb topping mixture.

To make crumb topping: mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter and 1 1/2 teaspoons cinnamon. Mix with fork and sprinkle over muffins before baking. Bake for 20-25 minutes in the preheated oven, or until done.

WARNING: These overflow in my oven every time... So, I have started putting a cookie sheet on the rack underneath to save clean up time later! :)

I usually double this recipe and get about 18 muffins.
