This recipe was so good that I want to go and have more right now... As I am blogging about it, Josh keeps telling me that I have to write about how yummy it was and that he wants to have it again!! Definitely a hit at my house. Since it was the first time that I have ever stuffed chicken, it was a learning experience at my Nourishing Hearts class. It wasn't super hard to tackle and if I can do it, so can you!!
Bacon and Cheese Stuffed Chicken
4 boneless skinless chicken breast halves
4 slices bacon, cooked and crumbled
4 ounces cheddar or pepperjack cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika, optional
Combine bacon and shredded cheese. With a sharp knife, cut a pocket into the thickest side of each chicken breast. Stuff each with 1/4 of the bacon and cheese mixture. Seal with a toothpick (or as many as you need to hold it all together:). SPrikle with salt, pepper and paprika. Bake, covered in a 350 degree oven for 30-40 minutes or until done.
