This was a quick and easy meal that I made for lunch one Sunday before we headed out to the ball field. It was delicious and a twist on the normal tacos... This definitely made more then I was expecting, as it said that it served only 4. So, I doubled it and I now have refried bean mix coming out my ears! :)
Refried Bean Roll Ups

1 can (16 ounces) refried beans
1/2 cup salsa
1/2 teaspoon chili powder
1 package flour tortillas for burritos
1 cup shredded lettuce
1/2 cup shredded monterey jack cheese
Mix beans, salsa and chili powder in 1 quart saucepan. Heat over medium heat about 5 minutes, stirring occasionally, until warm. Spoon about 1/4 cup of the bean mixture onto center of each tortilla; spread slightly. Top with lettuce and cheese. Fold over sides and ends of tortillas. Serve with additional salsa if desired.
