I love my crockpot for soups but with this summer being so incredibly warm (for Minnesota) I haven't busted out any of my favorite soups... We had a rainy day last week and it was the perfect time to make a soup - yay!! This was super tasty and would have been perfect with some corn chips sprinkled on top. Unfortunately that was a thought that I had as I was putting the soup on the table! :) Oh well, crackers work just as well...
Chicken Taco Chili

1 can black beans, drained and rinsed
1 can kidney beans, drained and rinsed
1 can corn
1 (16 ounces) tomato sauce
1 (28 ounces) diced tomatoes
1 packet taco seasoning
1 tablespoon chili powder
3 boneless chicken breasts
Combine all ingredients in crockpot and cook on high for 6 hours or low for 10 hours. Shred chicken and stir.
