Barbecue Meat Loaf Minis



My kids are big on anything that they can pick up and eat with their hands. Meatloaf in muffin form? That works perfectly! These were a tasty supper that was easy to throw together and even take with us to a game!

Barbecue Meat Loaf Minis
(recipe found in Taste of Home)

1 (6 ounces) package stuffing mix
1 cup water
2 tablespoons barbecue sauce
1 pound ground beef
1 cup shredded cheddar cheese

Combine stuffing mix, water and barbecue sauce. Mix in ground beef. Place 1/3 cup into each of 12 muffin cups. Bake at 375, uncovered, for 18-22 minutes or until meat is no longer pink in middle. Sprinkle tops with cheese; bake 2-4 minutes longer or until cheese is melted.
